Lectins is a non-enzymatic protein derived from a non-immune source that can agglutinate cells and precipitate monosaccharide or polysaccharide complexes. Because of its ability to specifically bind to monosaccharides or sugar complexes, it plays an important role in many signal processes such as signal transduction, immune response, and plant defense. At the same time, plant lectins have a variety of abilities such as cell agglutination, antiviral, antifungal, and inducing apoptosis or autophagy, so it has good research value and application prospects in life sciences, medicine and agriculture. It named after the plant from which it is extracted, such as conconvalina (ConA), wheat germ agglutinin (WGA), peanut agglutinin (PNA) and soybean agglutinin (SBA), etc.
Lectins participates in the defense response of plants. It is stable in the higher pH range, resistant to heat, animal and insect proteases, and can function as a defensive protein when plants are harmed.
