Free fatty acids (FFA) are both the product of fat hydrolysis and the substrate of fat synthesis. The concentration of FFA is related to lipid metabolism, sugar metabolism, endocrine function, and can also reflect changes in food quality during food storage.
FFA only accounts for 10% of total fatty acids in biological samples. With its low content and wide dynamic fluctuation range, it is a challenge to simultaneously detect and quantify as much FFAs as possible in biological samples at one time. We use LC-MS/MS to qualitatively and quantitatively detect the full spectrum of FFAs in biological samples such as urine, whole blood/serum/plasma. The detection of FFA levels to reflect the body's lipid metabolism, sugar metabolism and endocrine function status is of great significance for exploring the pathogenesis and prevention of diseases.
FFAs can have an important effect on food flavor. The content of FFAs in the oil is an important indicator of the quality of the oil. Testing the FFA content of food products can help evaluate product quality.
