Coumarins are first found in the black bean. They exist in the form of glycosides in the black bean, sweet snake whipweed, wild vanilla, orchid and other plants, and have the fragrance of fresh hay and sweet bean. Coumarins are white crystalline solid, insoluble in cold water, soluble in hot water, ethanol, ether and chloroform. Coumarins can be used in the blending of soap and various detergents, as the main component of the blending of spices, and they also can be used as electroplating brightener. In addition, coumarins have a similar structure to vitamin K, which can inhibit the synthesis of blood clotting factors in the liver, and can be used as an anticoagulant. HPLC and MS are sensitive analytical technique that enables detection, identification and quantification of a variety of coumarins by measuring and characterizing their chemical structure, even at low abundance. MS instruments combine with either LC or GC to effectively separate organic molecules from complex samples.
